How do you produce traditional whisky in an innovative space?

A joint meeting with IES and Heriot-Watt University.

There is a beautiful, bold and modern building rising on Leith’s waterfront. The innovative vertical distillery reflects both the limitations of the site but also the ethos of the Port of Leith Distillery. The result is a modern landmark that compliments the history and other attractions in the Port of Leith…..but what does that mean for whisky production?

This lecture will consider the structural engineering challenges associated with the vertical distillery building. We will also hear how the building design has changed the process engineering design for whisky production. Thus explaining how to produce this much loved traditional product in an innovative space.

​Ian Stirling, Founder/Co-CEO of the Port of Leith Distillery
After a decade in the wine industry working in London, Ian Stirling returned home to Edinburgh with his lifelong friend Paddy Fletcher in 2014 to found Muckle Brig Ltd.

Their key ambition was to build a new landmark scotch whisky distillery in their home city.

This is now taking shape, with the Port of Leith Distillery under construction on a site next to the Royal Yacht Britannia. They also launched Lind & Lime Gin in 2018, which is now exported to 20 markets worldwide.
